Eating Mycelium

I've read that you can eat mycelium that you've been growing (in quantity) in a liquid medium (i.e. honey water)...I'm wondering:

If contams rarely show themselves in honey water, is it really safe to eat the mycelium???

I realize honey has some anti-bacterial properties, but does that override the potential threat of poisoning from un-seen contams???

I may be showing a huge amount of idiocy here, but I'm gonna guess that most contams are shit that we ingest on a constant basis all day everyday, breathing, eating.....existing.
It's not the contams that are harmful in most cases, but the toxins they exude as waste.....
