Are these clumps fatasses? If so do I just need to fan more... I thought that my ultra sonic humidifier terrarium setup would take care of O2 exchange. Whats wrong here!?

Maybe your moisture content is too high on your cakes/casings and the shrooms cant stop drinking...

What is the best way to reduce the moisture, but keep the humidity?

You can drill a hole at the bottom of your terrarium, you can use a fishtank airpump, you can fan manually (more). Choose.
BTW moisture is a sign of high R.humidity.
