off white mycelium????

Someone I know cased 3 jars 5 days ago. Before he cased the jars the mycelium was turining light light light brown almost off white. He was told it was doing this due to the mycelium pushing up on the glass trying to fruit. The mycelium in the tray is that same odd color as the center of the cakes. Why is this, is it even mycelium?

could be your cakes are drying out and its dead mycelium cells building up.. maybe not though.

Thats often a sign that the mycelium is maturing to the point that the pins pop.... ' perfectly normal with some strains, many find it a healthy sign. I dont believe that it has anything to do with the jars. As you said, it happens in trays too.
