Question on this tek - Oven Pasteurization

In the above tek, towards the bottom of the tek where it says "Now that you have your straw/compost/dung all hydrated, all you need to do now is to tie off the top of the oven bag and then place a thermometer through the top, like so" does the thermometer pierce the top of the bag? And how exactly do they mean tie off the top of the bag if you're supposed to put the thermometer in by some other means? Thanks for any help you can offer. Peace.

Bag has an open neck. Insert thermometer in open neck & tie bag neck shut(around thermometer)with butchers twine (string). Once done, I seal with a thich rubber band, to cool.
