need advice fast - soggy jars
    #415665 - 10/06/01 09:43 AM (23 years, 4 days ago)

after pressure cooking my grandmas 1/2 pint jars last night for 1 hr @ 12-15psi, i found out that most of them have too much moisture on the bottoms.
are these alright to use or are they too wet?
can i save them (i'd hate to waste brf and verm mix)
what about cooking them more?
any suggestions?

thanks

I would start over and next time wrap the jars with tinfoil to keep exess moisture out

the extra moisture is from bad substrate mixing not from water entering during cooking.

i was thinking.....what about emptying the jars, removing the excess water and patting the substrate with a sterile cloth, checking for consistancy and recooking.

the recooking should kill anything that is contaiminated while opening the jars?

You mean supportive one's? Nah, not really..
He's right.. Once you reach a certain point pressure cooking\boiling jars, it starts to carmelize the sugars in the substrate, therefore breaking down the viable nutrients and lowering success rate.. Easier to start over.
