Misrepresented temperatures associated with convection and conduction

  7th grade, learned Physical Science.  Heat transfers by 3 methods, Conduction, Convection, Radiation.    :egg:

When you're pasturizing h-poo or PC'ing jars or a liter of agar, the temperature throughout the pot/PC'er is mostly controlled by convection of heat through air/steam/water.

At the bottom of the pot the pillowcase of hpoo is in direct contact with metal in direct contact with a burner.  Certainly, without a doubt, this results in a temperature of the hpoo (or jars, or whatever) being well in excess of the temperature you are shooting for.  :alert:

The heat being conducted through the bottom of the pot must be in excess of a thousand degrees.  :alert:

Seems to me this would be imperative to elevate whatever you are cooking, keep it from touching the bottom/sides of the pot. 

How relevant an issue does this seem to those with educated opinions?    :shrug:

Common practice is to use the cooking rack that came w/ your PC, or to put a towel in the bottom...

To pasturize......In a POT of water, you PRE/HEAT the water, you also place a dinner plate or 2 in the bottom of the POT, for this very reason. Pre/heating & a couple plates in the pot bottom do the trick, so you don't overheat whatever it is ..... you are pasturizing.

A PC has a grate in the bottom of it (or should).
