karo+pc=overcook?

Well I made a Karo jar and a honey jar, the honey caramelized, does this mean I killed the Karo too? Or can Karo be cooked longer?

afaik for liquids go 20 min max once u reached 15 psi.
longer will give you the caramelisation you encountered.
thats for honey, as i never tried karo i cannot comment on it.

this is strange to me because I cooked my honey/water for 60 minutes at 15 psi and it never carmelized.

I have never had Karo or Honey carmelize on me at 30mins @ 15psi.

How much honey and water did you use?

might have been that your ratio of honey was too high.

I used a nice full teaspoon full, this time I used less and cooked for 15mins, looks good now.

The jars were filled to about 3/4 of the way up to the threads

Man you REALLY need to learn to give more details lol

WHAT SIZE JARS? "3/4 of the way up to the threads" Doesnt tell me how much water you used.

I always had honey carmalize on me. Only did two small batches of it though and I think I let them get to hot to quick. I've found Karo can do the same (though not as easy as honey) if you cook it for to long, heat up up to quickly, or let the PSI get to high (mine runs up to 20PSI often if I dont watch it). I let the PC warm up on med-high instead of just HI these days, keep it right at 15PSI...and as soon as 15 minutes is up, remove it from the heat. I'd imagine following these procautions even honey wouldnt carmalize..though it does have a slight tint to it. Stuff floating in it is the problem.

I know Agar boils his LC water first, then strains it to remove any crystalation, then PC's it. I dont know if this actually does anything to prevent further crystalization or if he just doesnt crystalize it when he PCs because hes carfull...either way, good luck.

Actualy, I just simmer it to "meld" the solution, then PC it @ 15 lbs 20 minutes. Then, decant, filter & re/PC it. Crystal clear solution results.
