this place has a skillion and a half recipes using horseradish - don't see a plain old fresh horseradish recipe though

I make my own.

I've been using this simple recipe I found at allrecipes

INGREDIENTS:
1 cup peeled and cubed horseradish root
3/4 cup white vinegar
2 teaspoons white sugar
1/4 teaspoon salt

DIRECTIONS:
In an electric food processor or blender, process horseradish root, vinegar, sugar and salt. Carefully remove the cover of the processor or blender, keeping your face away from the container. Cover and store the horseradish in the refrigerator.

Tastes best on a ham sandwich.

If you have a yard or garden you can grow your own root.

We sell quite a bit of fresh horseradish root in my produce department. But it's a supermarket in the states... soooo tasty to make yer own. You_Suck's recipe is better IMO cuz you get to BITE into the shreddedness. I like it on some crusty ass bread with roast beef and smoked cheddar. YUM

I don?t make it very often, but when I do - it makes my eyes water like a MOFO. From what I understand, you add vinegar to stop it from getting too spicy. So if you like it mild, add the vinegar right away; for hot wait a while.

so I went to the local 'vegetables store' and asked for horse radish. it took them a while to find it and they only had 1 and they didn't know how fresh it was so I got it for free
I just processed it with vinegar etc. It's less strong then I expected, maybe the root was old?
I'm going to add atiny bit of yoghurt to make it a little creamier.

edit: added the yoghurt and tasted it again on a cheese sandwich. I put a lot on it becuse I didn't think it was that spicy. I'm typing this wiht watring eyes and a burning nose so I was wrong :smirk: Very tasty though
