Should i be using the horse shit from the bottom of the pile (compost) or the more fresh nuggets like for cubes?

Need there be gypsum or CaCo3 added to the substrate?

just use wbs for the sub, unless you have experience with compost. Then just follow the straw shit compost recipe

Stop experimenting half way through your first grow. Grow it to maturity, watch it, learn from it. Do this a few times then experiment with different ideas and figure out what works best for you.

Is it better to use cow or horse shit for portobello fruiting substrate? Is the amonia a problem?

yes. ammonia is toxic to practically all living organisms of macroscopic size.

I'm not certain but I would expect cow and horse dung to perform similarly, it would largely depend on the specific animal's diet.

If you are interested in having a few fruits, you can also fruit Portobello's from cased grain spawn, just like cubes. The casing has to be biologically active though.

The harvest will be very small compared to harvests from compost.
