brown sugary smell in uncolonized jars

Hello all. A foaf had innoculated 5 1pt. jars with P.C. Ecuador two and a half weeks ago. Not so much as a white dot in any of the jars. So he decided to re-sterilize them and try the mycelium solution innoculation on them (he has some cases in the works). The uncolonized jars had no visible signs of contams, but had a very distinct odor (only noticeable when smelled up close). It smells to me like either brown sugar or carmel, like on a candy apple. Is this normal or a contam? Is it safe to resterilize? Thanx in advance for any help.

probably normal, and probably ok to resterilize. oversterilization will result in carmelization of the sugars and this in turn does not promote mycelium.

i hate to throw out material too.
