Red Peppers and Green Peppers
    #3514522 - 12/17/04 04:53 PM (19 years, 4 months ago)

I love them both, but recently had an argument about them, which I cannot find a conclusive answer to.

Are they the same pepper in differing states of ripeness? I think they're different types, perhaps very closely related.. but different none the less.. i.e. Plant red pepper seeds for red peppers, and green pepper seeds for green peppers... While my friend argues that the prior is true.

So I ask you all, which is it? :wink:

According to foodreference.com, a red bell pepper is simply a mature green bell pepper.

Your friend is correct.

Also of note, a red bell pepper has higher levels of Vitamin C and Beta Carotene (Vitamin A) than does a green bell pepper.

"What about yellow bell peppers?  :shocked:"

Some varieties of bell peppers ripen from green to red.

Other varieties of bell peppers ripen from green to yellow.

They are not the same IME. My green peppers NEVER turn red. But my red peppers do change from green to red.

Yea... we were both right... kinda...

Green peppers are not just unripe red peppers, though. There are green peppers that stay green.... =\

Green->Green
Green->Red
Green->Yellow
Green->Orange

Sweet bell peppers can be orange, yellow, red, purple, brown, black, ivory or green, depending on the stage of ripeness and the variety.
Green bell peppers are fully developed, but not ripe.
All sweet bell peppers start out green, and change color as they ripen. (They also get sweeter).
What can be confusing, is that there is also a variety that is green when ripe.
The color depends on the specific variety, the most common variety is red when ripe.
So--- Green sweet bell peppers start out green and are green when ripe.
Red, yellow, etc. sweet bell peppers start out green and turn red when ripe.
What you find in the store are usually either unripe green sweet bell peppers or unripe red ones.
They will not be any of the other color varieties in the green stage because the other colors can be sold at a much higher price, so they are always allowed to ripen before being sold. The additional time it takes to ripen and change color accounts for part of the reason they are more expensive. Also, since they are ripe, they have a shorter storage time.

what's even more confusing is that in some countries they use the word "paprika" for bell-peppers (not in their own language - in english). but paprika is also this spice, very popular in hungary...

:what:
