when to birth cakes?

I have several cakes that are 100% colonized with mycilium. some of there I plan to case and some I do not. they have been fully colonized for r several days now (invitro) at an average ambient room temprature of about 80f. My question is should I birth the cakes now into the terarium aand or casing material or should i wait to see signs of pinning in the jar befor i birth the cake to maximize fruiting?

If you're going to case, then you should birth the cakes now. (It sounds like you haven't done this before, so make sure you've done your homework on how to do a casing). For the jars that you plan to use for the cakes, you can leave some of them alone for a few days longer until you see the first signs of pinhead formation. Then pop the cakes out just like the others and stick 'em in your terrarium. Good luck!

Case them before they pin.  You don't want mushrooms growing under your casing layer where you can't see them.  A rotting mushroom will contaminate the casing.
