Herecium abietis, Matsutake, and Golden Chantrelles.

Had cooked up some herecium before. noticed it was pretty bland...

so i chopped up some matsutake (peppery taste) and some golden chantrelles (earthy taste) very well. added it to a bunch of herecium. in a pan i was already sauteeing onions in butter.. i added the 3 mushrooms. i added some beer to add liquid so the juices from the mushrooms could mix....... after sauteeing for a while.. i added more beer again. i let most the beer evap off, after adding some salt and lemon pepper.

DAMN IT WAS GOOD.

the herecium absorbed all the flavors.

That sounds pretty good.
I just harvested some Hericium erinaceus today and I'm trying to figure a good way to cook em. I hear they are good with butter sauce.

I tried a bit, it was ok. Not sure if i cooked them long enough but I liked the flavor.
I have never cooked it before this so I was being a little cautious to be sure that I wasnt allergic or something. I always start small when trying a new wild edible that i pick myself.
How do you suggest preparing them?

Id prepare them by throwing em out my kitchen window under a bush. But thats just me, they taste like a bitter medicine too and in my opion should be listed as just a medicinal not and edible. Maybe I am being to hard on them lil guys.

They aren't that bad!
Maybe you had a different species or yours were not in good condition.
The specimen that I picked tastes great and not bitter at all, not even a hint of bitterness. I tried them because one of the guys from the mushroom hunting forum (ToxicMan) recommended me to try them, saying they were good.

i think they taste good. it's been a while since i've eaten herecium, but i don't recall any bitter taste to it. how do you cook them?

I grew them on hard wood sawdust  bags.  Picked in peak condition.  And tried so many ways I couldnt even beging to tell you.  Maybe its the substrate maybe its the clone I duno.  Tried em with all the other dishes I use mushrooms in with no avail I end up picking them out. 


When I would take them to market the ones from the week before would still be there, after a while noone liked them.

I even think the clone came from fungiperfecti.
:shrug:  Its got to be the substrate!
