Why is air fryer not better than dehydrator?

I've seen people saying that using a dehydrator are the best way to dehydrate shrooms and using air fryer generally leads to poor results, and i genuinely want to know why.


we know for a fact because of several studies that psylocibyn can withstand even 125 degrees Celsius without much loss, and 100 degree celsius with barely any loss.

this means that a normal air fryer operating at 80 degree celsius(pretty much standard lowest temperature of all models of air fryer) would be much better than a normal dehydrator, because is hotter and has a better air flow(air fryer has a more potent fan)

we also know that heat helps to kill the enzymes that degrade psylocibyn faster.

then for what reason this is not the best way to dehydrate shrooms?

air fryer have a higher temp and higher air flow, meaning is just a direct upgrade from a dehydrator.

Dehydrators work better because they're designed for purpose. 
Dehydrators constantly pull heated fresh air into the cavity to evaporate and push moist air out, air fryers just recirculate the air in the cavity with comparatively little moisture egress.

You've misunderstood that chart you posted. If you read underneath it shows the potency loss at the various temperatures in just 30 minutes. And people dry their mushrooms for hours.

And as the conclusion of the paper states, low temperature drying at room temperature is best for preserving potency, "To prevent the degradation of fungal tryptamines during sample processing, the most suitable conditions were to dry the fruiting bodies in the dark at room temperature."

As you can see from that chart you posted drying at elevated temperatures degrades potency. The hotter the drying temperature and the longer the time the faster the alkaloids degrade.

If you are using a dehydrator temperatures below 40C (104F) are recommended by the published research to avoid an unnecessary loss of potency.

So the table says:

"Temperature stability of mushroom tryptamines from
fungal homogenous powder that was heated in five replicates for
30 min"


I'm reading this as the mushrooms where already dried then made into a powder, it was this homogenous powder that was heated for 30 minutes. If I am not misunderstanding here, how is this even close to dehydrating whole mushrooms :confused2:

If you grow cubes, don't sweat over some initial potency loss. Just grow more.
If you want to preserve stuff long-term, it needs to be bone dry. The real potency loss occurs when improperly dried shrooms are stored.

That's what I'm saying. The chart doesn't show the potency loss of fresh to dry fruits and prove that elevated temperatures don't degrade potency. To work that out you'd have to multiply the potency loss in 30 minutes at your drying temperature into your total drying time in hours.

I can post scores of other research papers that all conclude that elevated temperatures during drying, extractions and storage degrade potency but it all boils down to very simple principles of high school chemistry.

Potency loss is a chemical reaction and heat acts as a catalyst that speeds up chemical reactions. There's a rough rule of thumb in chemistry that every 10C (50F) increase in temperature doubles the speed of a chemical reaction. So every 10C increase in drying or processing temperatures doubles the loss of potency.

This conclusion doesn't make sense. Oxidation and the enzymes that consume psylocibyn exists, and thus dry them in room temperature air is worse. They just pick the simplest explanation, but the simplest explanation are not always right.

Drying shrooms always have a potency loss, but temperature is what cause less loss, because reduces the time, and kill the enzymes. Putting them in air fryer 80 degree Celsius, you can probably finish in 1-2 hours. If you dry in room temperature air, it takes like 24-48 hours. The shrooms degrades this whole time frame.

They also use powder, that have a way more contact with the temperature they are using than whole shrooms.

Some air fryers generally rotates fresh air that comes from holes from behind the air fryer, and also exhaust air, but I get your point. Is truly worse than a dehydrator.

What is possible to do is open the air fryer after some minutes and manually exhaust all the steam.

It's got nothing to do with just picking the simplest explanation. It's what the research paper you posted concludes after their research and confirms what's been the scientific consensus for decades. Air drying in the dark, at room temperature (20 to 25C) is the laboratory standard for drying mushrooms for research to avoid degrading potency.

Heat increases the rate of all the reactions that degrade potency ie. hydrolysis (reacting with water), oxidisation and photo-degradation. And the enzymatic degradation of psilocybin is an injury induced reaction that requires oxygen. No injury, no oxygen, no degradation. Knocking out the enzymes by denaturing them with heat actually leads to more degradation because one of the synthesis enzymes, PsiK, has a repair function which rephosphorylates any psilocin produced in the fruits back into psilocybin.

Here's a list of research papers that prove my points.

Stability of psilocybin and its four analogs in the biomass of the psychotropic mushroom Psilocybe cubensis.

"Degradation of tryptamines was observed at 25C, 50C, 75C, 100C, 125C, and 150C for 30 min according to the procedure attached in the supporting information."

"The temperature of 25 C was chosen for the extraction as it reached the highest yield of analytes, which is in line with the previously published work."

I get that most of that, I think :muppet:

What I am saying is that if you expose 1 gram of powdered mushrooms and 1 whole fruit that weighs 1 gram to oxygen(open air) the powdered gram will loose it's potency a lot quicker then the whole fruit because of the increased surface area.

So I don't think the chart can be used in any way to determine the potency loss during dehydration. It's a chart for how the already dried and powdered mushrooms hold up in different temperature, right?

I would think time matters here and how much extended time is needed to run the dehydrator at 35°C before they are completely dry as opposed to 70°C for 24 hours :strokebeard:

I do not disagree with you or the papers you refer to, I just don't see how that chart is telling us anything about the loss of potency in whole fruits during dehydration.

We can improve on their methods for home use where we don't have to homogenise our sample material for testing and yes, potency loss would be less if the experiment had been done with whole fruits to reduce oxidisation but the negative effects of elevated temperatures would be exactly the same.

The chart shows the effects of temperature on psilocybin as a solid in dried fungal material and we know that psilocybin is more stable as a solid than in solution, so it's a reasonable extrapolation to make that degradation would be similar if not worse in fresh mushrooms.

And this is borne out by the results of this paper I posted above that found that at 90C, 17% of the psilocybin content in a solution degraded into psilocin per hour. And at 70C, (around dehydrator top temperature) 3 to 4% of the psilocybin content degraded into psilocin per hour. So again, for drying you'd have multiply that potency loss into your drying time in hours.

And note that their findings conform to the 10C rise in temperature rule I mentioned above. 70C 3 to 4%, 80C (extrapolated) around 8%, 90C 17%.

So whether it's a solid or in solution, psilocybin degrades faster when exposed to elevated temperatures, temperature/time.

Try it as an experiment Chiron, there's a reason people use dehydrators, I once had an excess and thought to use the airfyer on low, the airflow is a major issue with I assume majority of airfryers, Ended up with a dark blue mass of soggy mushrooms and alot of liquid in the bottom, all went in the bin.

My takeaway was that mushrooms are more how you treat biltong/jerky/speck, and trying that in an airfryer even on low wouldn't work.

Well, now I know for certain that this is above my pay grade, because if I have 100mg of psilocybin and lost 4% every hour, I would have 0mg psilocybin after 24 hours at 70°C :confused2:

Lots of testing by folks over the years here. Oxidation is what kills potency, not heat from a dehydrator. Dehydrator heat may cause slight loss. Oxidation by drying low and slow runs a higher risk.

You can fry fresh mushrooms and they can still slap hard.

I’ve yet to pick up a mushroom from a dehydrator and it be more than warm to the touch. Never too hot to handle, which if being run in a dehydrator at 165*F heated them to that temp, for me, they’d be too hot to handle. I’m sensitive to tactile heat. 🤷🏼‍♂️

End of day a few % here or there nobody will truly notice, given the variance between fruiting bodies within a grow, and variance batch to batch.

Right? I run my dehydrator at 165*F for all my batches. Sometimes it takes 6 hours, other times 24. Either way they always fuck. 😂

Clearly there are some nuances when it comes to drying whole fruits in a dehydrator. The skin of the mushroom forms an impenetrable barrier to oxygen while it retains its integrity, the alkaloids are likely stored in vacuoles where no free oxygen is present to trigger enzymatic degradation, PsiK has a repair function that protects psilocin from degrading, the alkaloids become more stable as they dry etc. but that doesn't change the fact that elevated temperatures result in faster degradation of the alkaloids whether they're in solution or a solid in dried fruits.

The 3 to 4% figure is dephosphorylation to psilocin, not degradation of psilocin into its inactive oligomers but we know psilocin is highly reactive and degrades quickly in the presence of water, oxygen and light. And to bring this back to the subject, it also degrades faster at elevated temperatures.

To address your point, overall potency loss gets less for every hour of drying.

Start with 100%

After hour 1: lose 4% of 100% → 96% remains

After hour 2: lose 4% of 96% (= 3.84%) → 92.16% remains

After hour 3: lose 4% of 92.16% (= 3.6864%) → 88.47% remains

After hour 4: lose 4% of 88.47% → 84.93% remains, etc.

So a ten hour drying time would result in 66.48% of your starting psilocybin content remaining and a potency loss of 33.25%

So that's the chemical equivalent of throwing a third of your harvest away.

i did not read all those papers to have a true scientific consensus on the matter, thus i will first say what i know, and after i will say what i researched a little just to answer you.

first, my point here is a situation of "picking your poison". every dehydration method has degradation at some degree. there's three things that accelerate degradation: Heat, humidity, and oxidation.

the point is, when you use a dehydrator, you have humidity(because it takes 12-24 hours to dehydrate) and you have oxidation, because is 12-24 hours in there.

when you use a higher temperature, the time reduces drastically, even though it can increase the hydrolysis and oxidation, it is still the "best poison".

so my point here is: heat + less time of exposure better than no heat + more time of exposure.

also, psilocin should NOT be preserved. trying to preserve psilocin is a "lost war" and psilocin is highly unstable even for scientific standards.

you also shouldn't try to preserve psilocin because you can't truly quantify how much psilocin was lost because of it's inherently unstable nature.

this is my argument. now i will talk for what i have researched briefly:

I've seen that in scientific context, they don't use our mycology enthusiasts methods, like fan drying in room temperature for 24-48 hours. they use proper, professional equipment, like vacuum dissectors or freeze drying. so you can't use it like a argument, as they use a method that is faster with still lower heat, what obviously, most people don't have access.

like i said in my argument above, the heat is meant to reduce time of exposure, but if you can reduce time of exposure without increasing heat, then this is obviously the best method.

the PSIK argument for what I've seen is also bad, because the PSIK enzyme needs ATP to function, and after harvesting the shroom, the ATP is going downhill. meanwhile, the PSIP enzyme works by hydrolysis and don't need ATP to work. this means that the PSIP enzyme is running wild and needs to be deactivated ASAP to not degrade psylocibyn.

when you dehydrate on higher temps, the water is leaving the shroom. thus, it will reach 100 degrees Celsius, and then leave the shroom, not sit for 1 hour like in this test.

and this also proves what i said, as they say that drying at room temperature transformed psylocibyn in psilocin, which means degradation, and as i said, trying to preserve psilocin is useless for several reasons.

Oxidation isn't what kills potency during the drying process. There's no oxygen for the alkaloids to react with inside the internal tissues of the fruits while the skin maintains its integrity.

Hydrolysis (reacting with water) is what kills potency during the drying process and hydrolysis increases with temperature. Which is why elevated temperatures cause the alkaloids to degrade faster.

Psilocybin will degrade into psilocin at room temperature but heat increases the rate of degradation in a linear fashion as temperatures increase. You can clearly see that happening here in this chart.

Instability at elevated temperatures is a fundamental chemical property of psilocybin and psilocin. And no amount of subjective "well these still slap" anecdotal experiences is going to change that.

hydrolysis also decrease with lower temperatures, but the study i quoted have this chart:



it says that lower temperature(that should stop completely the hydrolysis you said) to be the worst, even worse than higher temperatures.

the skin of shrooms are also porous. shrooms are aerobic organisms and consume oxygen to live. thus saying that oxygen doesn't enter the shrooms if the skin is intact is also wrong
