I don't know what you are talking about exactly, but bear fat is stellar. Most of it (not the shoulders, they smell like wet dog) is sweet and creamy and viscous. Not all animal fat is the same in fact it is all very different. You don't want to eat turtle fat and if you do it can make you sick. Deer hardly have any fat and the fat they do have is gamey. Cow fat is good but hog fat is better.

Bear fat is my favorite fat, and they make a lot of it if you get them toward/during the winter...

This is one of 4 or 5 buckets of fat I got off of a 500 lb black bear.


I like to smoke chunks of the fat that I soak in maple syrup and sea salt for a couple days and rinse. After smoking over cherry and chaga mushroom I bring it in and chill it. Then I slice it off and fry it like bacon and eat it like that. You can render it too and it makes great frying oil as well as stellar cookies and pie crusts.
