Question about the perfect rye to water ratio as substrate?

I was kinda confused as to the recipe on this tek. It says to simmer the organic rye for 45 mins, then strain for 20 mins and insert the strained rye into the jars for pressure-cooking. Then it says that basic recipe for the amount of water in a 1-pint jar. So how can I measure the amount of water and rye, after the rye has been simmered for 45 mins and is wet? Do I add extra water - or do I just simmer the 100g dry rye, in 110g water? Also whats tha knife tip full of gypsum for?

Basic rye recipe for 1 pint jar:
- 100g(3.5 oz ~ 125 ml) rye
- 110g(3.9 oz =110 ml) water
- knife tip full of gypsum

i would worry about what the exact water content is.it's not that important just need to make sure it's hydrated well.simmering for 45 minutes will do.you could also soak the grain for 24 hours,but don't go any longer than 24 hour the grain will start to germinate.

take single grain and squeeze it that should give you an idea of how moist it is.the grain should be soft and smash fairly easily.
