Rye do be stAnk-e. Only thing I've ever found to [mostly] eliminate this is to "parboil" the berries for about 5min to get rid of some of the starchy stuff on the outer casing that wahts to ferment and give that smell. Same thing works with dry beans to make them "fart free". Parboil and rinse after soaking and it will get rid of the complex carbohydrate coating that we can't really digest. Its this coating that passes through your stomach undigested, only to be fast food for bacteria in your lower GI tract , hense the gas.

so boil them for like five minutes, and then continue to work as if the rye was fresh?

soak [overnight], rinse, boil for 5 min, rinse, then finish cooking along with whatever "recipe" you are following. Just remember that by this time the grain should be well saturated with water, so very little extra needs to be added.

No only if cell wall is broken down sufficiently, rye can be sterilized and boiled (to take up water) the same time.
If you use the correct ratio it will (1 cup rye with 1/2 cup water)
this will make your rye wet enough.

the carbs are what the mycelia get out of the grain. The stuff you wash off is only a tiny fraction of the nutritional value, but what you do lose are some complex sugars that the mycelia can't digest too well but yeast and certain bacteria love. Rinsing is also a good general cleaning, even good organic rye stored properly is still going to have a fair amount of naturally occuring mold/yeast/bacteria on its surface. Now proper PC'ing will kill 99% of them...but that 1% that's left can cause the stinky problem.

thanks guys, i guess the whole rinsing bit needs to be included in the rye teks. well now i will have less stank rye for next time...if there is a next time.........of course there will be a next time, who's kidding who.....
