Must be less than 105F or the spores bite it I think.

they should be room temperature. but don't go sticking a thermometer in them to try and test it. just let them sit overnight and they'll be ready the next day.

the jars or whatever will be plenty cool in less than 5 hours. You see , mass is what determins how long you will have to wait. So 24 hrs is overkill.
