i wouldn't let them sit out more than 3-4 days without being inoculated. you increase your chances of contamination with every passing day, so the sooner the better.

seems like if the jars is sterile, and sealed, that's it.
shouldn't it last along time?
nothing can get in.
i think lettin em sit for 4 or 5 days is good-you can throw away contaminated jars before wasting an inoc.

The rice in the substrate mixture should be thought of as cooked food. Even if everything is sterile and sealed, if cooked food is left out of the fridge for a couple of days it will spoil. This is a lesson learned the hard way. My friend's hamster forgot to innoculate his jars for 3 days, and when he finally got around to it, they had gone bad and had to be thrown out. What a wasted effort! Good luck! Someone let me know if I'm wrong about this one.

Thanks for the input, but here's a thought. Substrate, even substate that good fungus has yet to reach 'keeps' a month or more, in some cases, after inoculation, and before 100% colonization. I don't see how an uninoculated jar could go bad in a number of days, as has been sugested, if this same jar would have lasted the entire time until birthing. Surely, the mycelia cannot fight off other oganisms and maintain substrate conditions a pint jar away.
-so, what are your thoughts?

Delaying innoculation will increase the chances of contams. I would say 3-4 days at the most. I may be wrong though.

That's what I thought too. I left my jars for a couple of months after they had been sterilized in a pressure cooker and then screwed shut. When I checked on them, they smelled really bad. I didn't even bother using them for innoculating. I'm sure there is some scientific explanation for what happened but I don't know what it is. I would guess that even if they were not contaminated by something, the nutrition level would have been pretty low. I mean, canned foods go bad eventually.
