BRF cake not fully cultivated but has big mushrooms in jar

I have some BRF-cakes still in jars and they are not fully cultivated. One side is cultivated and another side is totally not. Yet I have a 5 cm mushroom grown in it.
1 - Why does this happen? Too much spores? I experimented with really high dose this time.
2 - Should I birth them already? Should I dunk before birth? Will the other side colonize in time?

Theres a couple reasons for this.

1) if your substrate is too loose, the mycelium will "miss" sections of the subtrate and think its done colonizing then start fruiting.

2) an infection, either bacteria or mold, will force the mycelium to fruit as a last ditch effort to survive.

U could birth it then remove the substrate that wasnt colonized would be my suggestion. There is risk of it getting infected with trich later on in fruiting since it didnt colonize correctly.
