I am interested in the soak no/soak debate, (I side on the meh, no soak works) But I am more interested in describing the entire process of prepping rye for cubes. Not just a Tek. I want to describe it with science.

I have done over 200 bags in the last year hunting down down this science, so I'm sharing it now....



The difference between 7 minute boil and 10 minute boil, if you keep other things constant, like water content.

The big take away I have found is cooking the hell out of the grains ABOVE 180 degrees for as long as you can is very beneficial. And Keeping it below 48% water content.

This is for huge bags of rye that you aren't Grain to Graining.

But people g2g'ing still want the rye the best it can be, yes?

I'll make up a Tek with what I've learned, let me know what you want shown in it.

I'm surprised that this 10 minute boil 46% bag grew so well. It seems that if the grains are cooked enough, they can grow cubes, even tho its drier. I had one bag this summer that was only soaked in 160 water and reached 55% water content and stalled out because it was too dry. Its like the seed kept being a seed, not a starchy food... and kept acting as a dehydrator in the bag.

See what I'm saying.... hydrating the rye and cooking the rye are separate things.

Its important.

We don't soak and/or simmer grains to cook them. We do it just to get the water content up. They need to get the right water content and they need to be sterilized, but the sterilizing comes in the pressure cooker not the boil. Cubes don't need cooked food they just need to be sterile and decent water content if it were possible to do that raw, that would be completely fine. They've existed for millions of years in nature without any of there food ever being cooked.

You can eliminate the variable of how long it takes to get to a boil by boiling the water separately and only adding the grain after it comes to a boil. This also keeps from bursting a lot of grains by not applying nearly as much direct heat to the bottom grains.

Here was Stamets' old Grain/Water formula and water percentage from GGMM. He does suggest quite a bit lower for water percentage for spawn bags.

Thats a very cool Staments chart. Its amazing how variable the water content is depending on the size of the container.

I am proposing that the cooking of the grains is actually important, in addition to the sterility and water content. Keep in mind, these things grow in nature on grains that have gone through a cow. Perhaps the cooking of the grains better estimates that condition that hydrating and PC'ing alone.
