18 eggs
Miracle Whip
Mustard
Sugar
Salt
Creole seasoning such as Tony Chachere's
Dixieland Chow Chow
Lemon Juice

The Chow Chow is the most important ingredient in this recipe.  It is cabbage relish, though it tastes nothing like cabbage.  I use this stuff in stead of pickle relish on everything, sandwiches, hot dogs, ESPECIALLY tuna.  Really there is nothing like it, if you've never tried it, I suggest you go and some right now.  You'll probably slap yo mama for letting you go through life without ever having enjoyed it. :devil:  Also, I suggest the Dixieland brand, HOT! HOT!, don't get the mild, it isn't spiced, and the hot isn't spicy enough to bother anyone.  I know Kroger carries it, not sure if anyone else does.  And, I've never found another brand as good as Dixieland.  Oh, and don't let the bottle fool you.  It isn't fancy on the outside, they put all their attention inside. :laugh:

Ok back to preparing this.

Boil eggs however you do them.  I swear this is the most difficult task I have cooking.  I always stuggle striking the balance between not making the yolk turn green and having ones that peel easily.

Peel, cut in half and places all the yolks in a bowl.  Now this is one of those things where I have never measured the amounts, just slowly add ingredients, taste testing the whole while, until it is to your liking.

I estimate 2 tbsp Miracle Whip, 1 tbsp mustard (I prefer a darker, or gourmet mustard, I especially like Jack Daniels Horseradish mustard, or Dijonaise) 1/2 tsp sugar, 1/4 tsp salt, 1/2 tsp Chachere's, 1 tbsp lemon juice, 2 tbsp chow chow.  Now, I'm not sure on these, so start there and add until it's to your liking.  DON'T SKIMP ON THE CHOW CHOW. :mad:

Mix it together, then scoop in egg halfs and chill or serve.

I swear, I have never had anyone eat these, that didn't agree they were the absolute best they'd ever tried.  But I must give credit to my mother. :heartpump:  I just modded her recipe slightly.  I think she uses to much mustard.

There weren't many left by the time I'll got the camera out.

I still stand by my claim in this thread.  Get the Chow-Chow!

This is one I use (it's the exact same as the Dixieland I wrote about).

Piccalilli is what I've heard it called, chow chow looks like the same thing, whatever it's called, it's great in deviled eggs.

When I just did the search for the link above, I saw the wiki article about it where they said it was also called Piccalilli.  I think I like that name far more than chow chow.  It's just fun to say.
