Armadillo Eggs

1 package of Johnsonville Hot n Spicy Bratwurst
10 jalapeno peppers cut in half length wise and seeded
8 oz of sharp chedder cheese grated
1 pack of lean bacon

Take bratwurst out of casing and put into a bowl and mix with the chedder cheese thoroughly.
Next take one half of the jalopeno and pack in the bratwurst and cheese mixture and then wrap the bacon around each half and put a tooth pick into it to secure it. Continue this process until
all jalapeno's are packed and wrapped.
Smoke these for about 1 1/2 hours or bake at 350?F until bacon is crispy.

Ok, so I went outside and stole some armadillo eggs from a nest under the neighbors house.. Nearly got bit, but i'm not sure if they have teeth. Anyway, you didn't say how they should be cooked.. Can u help me out??

Boil the eggs in dragon blood in a witches cauldron for 13 minutes. Peel eggshell off and slice eggs in half. Top with grated unicorn horn.

~45 minutes.

I was thinking.. waiiit, aren't armadillos endangered or something?
Armadillos are far from endangered. If you ever take a trip through Texas this will become apparent.

Here is the Shake N Bake version. I like these as a side for breakfast.

1/2 lb. grated Monterey Jack cheese
1 lb. hot sausage
1 1/2 c. buttermilk biscuit mix
15 jalapeno peppers
2 eggs, beaten
Shake'n Bake for pork chops

Slice peppers in half lengthwise and scrape out all
the seeds (wear gloves). Try to keep both halves near
each other as you have to put them back together
later. Mix bisquick, raw sausage & cheddar cheese.
Stuff each pepper with Monterey Jack cheese and put
the halves back together. Grab a handful of bisquick
mixture and mold around pepper in shape of elongated
egg. Use enough to cover pepper well. Dip armadillo
egg in beaten egg and roll in Shake 'n Bake. Bake on
broiler pan (can use cookie sheet) at 350 degrees for
25 minutes or until crisp.

kind of like jalapeno poppers, huh? except with sausage and jack insted of chedder, sounds tasty.

That shake and bake one sounds good too.  Anyways, I made your first recipe on friday.  I had the hottest dumps I've ever had.  Everyone needs to try these. :thumbup:

LOL!

If you replace the hot sausage with regular it cools it down some. I usually make them both ways for parties.
