Chicken noodle soup: how much noodles to add per quart of stock?
    #22227830 -

Fall is in the air, and that means it's time for chicken noodle soup. I've got a big pot of chicken and vegetables cooking in stock. The total volume is about 10 quarts. How much noodles would you add? Last time I eyeballed it and added way too much noodles and they soaked up nearly all the broth.

That's the trouble. I eyeballed it last time, without recording or remembering the total amount.

Try about 1-1 1\2oz. dry pasta per pint. I've been making vietnamese phó out of leftover roasted whole chickens & make 2 oz. of rice noodles for a little over 2 cups of soup. I like 4 oz. of dry pasta for a pasta dish, if that helps..

I generally don't like to make big pots of soup with noodles/rice, because the noodles and rice get over saturated and can turn to mush if the soup isn't devoured in short order.  When we make stock, we divide it into several quart jars (and a few pint jars), freeze it, then take out individual jars to use when the time comes.

If you're worried about your noodles suckin' up all your broth, cook the noodles separately in salted water, then add them to the soup.
