Tiger Sawgill/Little Shiitake (Lentinus tigrinus) Eats Trichoderma for Breakfast!

A few weeks ago, I noticed my fast colonizing grain jar of L.tigrinus was starting to grow trich on the top grains. I didn't get a pic of the trich growing and put it into quarentine for a week. Evidently the mycelium ate all the trich and left about an inch or 2 of deep of clear liquid:

2 days later, I spawned it to a phonebook because I didn't want waste any wood pellets if it still was contammed--following this tek: http://www.shroomery.org/forums/showflat.php/Number/8989786/fpart/1/vc/1 ; And 9 days later, it's probably about 70% colonized and already developing pins:

I'm still going to let it finish colonizing before putting it to fruiting conditions. Does anyone know about this species' abilities to combat trich or other contaminates? This surprised me.
UPDATE: 14 days after colonization, the premature pinning is getting out of control before the cover of the phonebook is colonized.
 ...And two days after fruiting conditions, slug damage even with a beer trap nearby:
 Four days after fruiting, the slugs and beetles are having the Tiger Sawgills as a late night meal. So I'm harvesting:

Those Tigers are pretty damn tenacious. I woulnt put it past them to do something like that. I found them to be more agressive than oysters.
I would grow them again, if only they tasted better....

I read these are supposed to taste good if the stems are cut thin and sauteed in butter with the caps.
OP updated. These seemed to pin a bit prematurely. I wonder if light is a pinning trigger. Are these supposed to colonize in complete darkness?

I cooked them up with some white sauce pasta. I ended up picking them out and eating the pasta without them. I was really unimpressed.
I can't see the stems being very edible. They are very toigh. Maybe more suited to be used as toothpicks.

I guess if they're that bad after a saute, then I'll dry out everything (stems and all), grind them up and use for broth.

That might work. But just because I didn't like them doesn't mean you won't.
I still think that they are an amazing species.

OP updated.
I harvested after four days because of relentless slugs and beetles even with a beer trap nearby. I fried them in oil with a little finely chopped habanero and onions and threw on pasta. They seem closer tasting to oysters than shiitake. Also they're extra chewy both the caps and the stems.
They are so mild in flavor that I'd assume the main issue with these would just be chewy texture.
