This helped a lot, I went out for a drive today and didn't suffer any jerking or lurching when shifting gears. I think my main problem was not paying attention to the speed AND the rpms.

It's insane how much of a difference it makes when your able to shift into 3rd or 4th without having any noise or jumpiness from the vehicle, wonderful.

I'm totally getting the hang of it now and feel super comfortable driving on any type of road.

Now I'm just wondering if its OK to press on the gas/accelerate when clutch is pressed all the way down and going from 3rd to 4th or 2nd to 3rd, etc.

You need no pressing of gas when clutch is all the way down. That is actually done in sport cars by pro drivers. When they break before curve 
and want to shift gears down  (I lost English words now...)...well they want to avoid, motor compression, so they have better control of car - they don't want that "kick", so they can enter curve in high speed and precisely...
