Chicken quesadilla

VERY easy...

You need:
one tortia, I use 13" flour tortias
some salsa
cheddar cheese
chicken breast
olive oil
basil/other herbs

Take your tortia and spread a little salsa on half of it.
Grill the chicken breast, then chop into fine peices and sprinkle on top of salsa.
Sprinkle cheese over the chicken and salsa.
If you have a frying pan big enough, place the quesadilla unfolded on a hot pan (350-400 degrees) for about 2-3 minutes, or until the tortia is SLIGHTLY crisp.
Fold tortia in half and brush the top with some olive oil.
Bake (preferably in a convection oven) for 3-5 minutes at 400 degrees, or until top is LIGHTLY browned.

And there ya go :wink:

Its not his fault hes retarded and non-Spanish. Quesadillas are good Mexican though, I'd love to find out how Taco Bell makes their sauce...

Quesadillas are really easy to make, nice and quick too. It's probably what I eat the most of at work  :smirk:

You can spice them up however you want, too. Mushrooms and lots of chopped bacon go really well on a quesadilla. Just about anything you can think of.

Our chicken quesadilla mix was similar but more spicy. Take the chicken breast, and coat it in cajun seasoning, grill it till it's done, and in a sauce pan fry some peppers and onions in butter, sprinkling a lil more cajun mix into the veggies, but not necessary unless you really love hot stuff, a lil goes a long way! In fact, the coating on the chicken is usally enough for the average person. Then after the chicken and veggies are done cooking, mix them together in the sauce pan, and sprinkle on some cheddar cheese. Mix them up. Then take a tortilla and set it on the grill for 12 seconds to give it grill lines. Pour the mix into the shell and fold it once, cut into fours, and enjoy.

just made one of these! It's kick ass.
I'm ghetto so i had to improvise. I used fried chicken, took the skin off and diced then added pepper jack and american cheese and hot sauce :evil: then voila~ :cool:

the best cheese for quesadias is oxoaca cheese. its kinda liek cheese strign cheese. the best.hand down
