That's the exact same thing I thought when I saw this thread... The thought of a fresh, fat yellow morel diced and saut?ed' in butter with fresh garlic (you only need one good sized one per person). With a dash of black pepper, beef stock, and some corn starch or flour to thicken, you make a powerful mushroom sauce. Serve with filet minion or venison steak grilled over charcoal and wood chips. Excellent meal served with baked potato and some corn on the cob (also grilled in the husk, don't boil your corn). Perhaps throw a cheese fondue along with bread and vegetables in there too for starters. Strawberry cheesecake is my favorite dessert, so I must add that as well. Choose your own wine, but it's best to avoid alcohol with the morels, and mushrooms in general.

IMO, you can't beat a morel for flavor induction. The black morels are good also, but lack the texture and density that the yellows have.


Figured this thread would get my mind dreaming of a mushroom meal, now im starving...  :smirk:

That sounds good TM. I like to grill my mushrooms when possible.
I melt some butter, add a teaspoon of soy sauce,a pinch or two of garlic, some Italian seasoning, stir it up and pour it over a bowl of mushies, mix it up good with my hands to cover all the shrooms then let it sit for 30minutes or so, then put 'em on the grill.
Did it with some portabellas last week, and the wife and kids, who normally wouldn't eat a mushroom, gobbled'em up.

I don't really "love" the taste of mushrooms in general but the way you guys describe them makes me want to goto the local mart and get to grillin and sauteeing. lol

Never tried Matsutake, but so far Agaricus augustus takes first place. You can't go wrong with morels, but that rich almond flavor of a nice fat augustus button is incredible.
I think it's interesting how many different 'favorites' people have. Yummy!

I couldn't come up with an answer. Mushrooms are so different in flavor from one to the next. Even the same type can taste totally different depending on preperation! The question of what is your favorite mushroom is like asking about favorite food. Is Lasagna better than fresh blackberry pie? Is Halibit steak better than a fresh tree ripened peach?
Is a pan full of stir fried shiitake's with a bit of garlic and soy sauce better than a pan of bolete's? They are all quite different in flavor from each other. Very hard to choose a "best"!

I grew up with only white-button mushrooms and never really cared for them, but after tasting portabella I'm defintely more interested in trying other mushrooms. I orginally was interested in mushroom hunting for the psychoactive ones, but the edibles are becoming fasinating as well. "Mushrooms, come for the psilocybin, stay for the edibles."

Twirling - you realize that the regular white button mushrooms and portabella mushrooms are the same species? The main difference is that portabellas are allowed to mature fully and the buttons are harvested while still very young.

It's amazing how much difference allowing it to mature can make.


gordonoalberto23 - I didn't think there were many others (other than Japanese) who tried nameko. They go pretty good in soup. On the other hand, how many mushrooms don't go good in soup?

I enjoyed some good-sized puffballs this week. They were most likely the "skull shaped puffball". So fresh and white and un-adulterated on the inside. They smelled creamy when cut, almost like a hint of chicken soup.

I sliced them thick, breaded, fried, then baked, and topped with Italian cheese blend and good spaghetti sauce.

Had some Grilled chicken breast and stir fried fresh peppers and cherry tomatoes from the garden and onions with it. I felt like a five star chef!
