Black Berry And Honey Wine

Just started a batch. Any other wine makers out there?

I wouldn't consider myself a wine maker, I'm more of a fermentation experimenter, but I do make some wines. Usually I make weird and interesting type wines that most of the people I know are afraid to try. Like jalapeno-onion wine, beet wine, parsnip-carrot wine, or burdock-dandelion-sunchoke roots wine.

Lately I have been experimenting with whatever fruits and juices I can find on sale at my local food co-op and the the 1 minute wine recipe found here: http://fivegallonideas.com/1-minute-wine-recipe/

So far all of my results have been less than spectacular, but they've all been drinkable.

I haven't made any lately but I've made a good amount of wine. I live in an area known for it's wine so grapes aren't hard to get here.

Very crude winemaking project. On the left is a small bottle of blueberry/blackberry/chokecherry wine. On the right is mead/honey wine.

The first picture was the start on the blue/black/chokecherry when I first started fermentation.

I make 5 gallon batche. Find a good yeast for the type of wine you want and alcohol content.

Ive made a few batches my first was a mead it was a really sloppy set up but it worked fine then I found a local tool store that sells wine making equipment and yeast :smile:

Jalapeno onion wine? Wow is it pretty good? I can see cooking with onions and jalapenos and wine pretty good but drinking it? Well anyway I made guava wine and am thinking of trying pineapple wine so who am I to judge unusual

I love how you use the baloon as an airlock. Does it work well when the pressure decreases a bit? Well, then again you arent TRYING to carbonate the wine but just seal it from infection right?

It was interesting.
It was dry, and tasted more like sake than wine. Could barely taste the onion. The jalapeno flavor was really mild too, but it was good and spicy.

I've used balloons in the past too, and they work just fine -- even when the fermentation slows down and the pressure decreases.
These days I use seran wrap and a rubberband, and that works just as well. The only drawback to not using a proper air-lock is it is harder to guage when the fermentation has stopped.

I am using the balloon as an air lock, but without a hole in it, so like you said it may carbonate I don't know :s but works just fine.




I had this going awhile now, ive let the air out of the balloon a few times aswell. was too sweet at one point so I filtered, added more water a little yeast and restarted fermentation on the honey wine
