A little condensation is O.K. but you dont want any standing water on your cakes, it'll turn them blue or yellow. My cakes always start growing from the side too, i think cause thats when the mycelium started out first so that is where it is more mature and fruitfull. All a light will do is make sure the shrooms grow straight up, its a fungus, it doesn't need light.

I was asking about casings and not cakes

Shrooms do need light for pinning to start

what i mean by giving them light is that i have them in a terrarium made from a plastic rubermaid bin it is not translucent so when i open it daily to get rid of co2 i give it light for about 10 min.

my caseing tray is clear plastic so that would be why a shroom is growing from the side but that is not my question. my question is how do i get the top to start pinning

You may want to try deep scratching the top of your casing. Take a sterilized fork and rake it through the casing all the way down to the mycelium. Expose the casing to 12 hours of light that has somewhat of a blue spectrum. Maybe drop the temperature, or raise it. What strain do you have?

i am using cambodians my temp was to low so i put a heating pad undr the ter. i'll see how that helps
