Shameless self-copypasta:  my reply from the Culinary Arts forum on how to make restaurant quality hard boiled eggs:

The actual recipe sounds yum, but the way you boil eggs is atrocious for the flavor, odor and texture of the egg.

Try covering the eggs with cold water, at least double as high as the eggs are in the pot, then add two teaspoons of salt per liter, bring to a boil then turn off the gas  (if electric place the pot on a folded towel to slow cooling) then let sit for 12 minutes, then quench with cold water, let sit to cool for 5 min and then proceed with your recipe.

Cooking that way will give you restaurant quality hard boiled eggs, and the cold quenching assures the skins peel off easily. It works as well for one egg in a little pot to a soup kettle with dozens of eggs.

They use it in salads.

A restaurant quality hard boiled egg has springy but not leathery eggwhite and a creamy yellow yolk that isnt crumbly, timted blue on the outside or yucky smelling. When you eat it you taste full eggy goodness without the yolk drying out your palate.

Seriously, theres a BIG difference between a hard boiled egg and a properly hard boiled egg. If you do it right one time you will always do it like that from then on.

I don't like hard-boiled eggs in general...

I can never say no to these beautiful pieces of culinary art though... :awetongue:

"I have no way of knowing whether you, who eventually will read this record, like stories or not. If you do not, no doubt you have turned these pages without attention. I confess that I love them. Indeed, it often seems to me that of all the good things in the world, the only ones humanity can claim for itself are stories and music; the rest, mercy, beauty, sleep, clean water and hot food (as the Ascian would have said) are all the work of the Increate. Thus, stories are small things indeed in the scheme of the universe, but it is hard not to love best what is our own—hard for me, at least."

Yeah you put them in a tea cup and on the microwave for slightly over a minute. The circular shape of the cup makes the egg come out perfectly round and not splatter all over, which is good for sandwiches and what have you

There's nothing like a perfectly cooked fried egg.  Sometimes its the simple things cooked to perfection that are the best.  I've seen quite a few fancy gourmet meals finished/topped with an egg.

Are you sure that'll cook it all the way through?  Has anyone tried this?

I love my eggs.

Scrambled are nice especially with salsa and grated cheese, but the thing that really takes the cake?

...Eggs in a nest. Plop a sunny side up egg on top of toast and add a slice of cheese for filling nutritious heavenly satisfaction.

Or just make an indentation, crack the egg onto the bread and put it in the toaster oven.

So, I'm about to try this.  You just bring the water to a boil and then turn it off?  ............and let it sit.  The terrets scientist in me says BULLSHIT... but his counter says, we'll find out  :mrburns:

I think eggs are gross right up until they are fully cooked & covered in salt
I always get scared cracking an egg open with the thoughts of a dead bird being inside rather than the yolk. & then I just look at the yolk as a a fetus while it cooks.
But then when its 100% done
