Salsa Verde
3-4 Tomatillos
2-3 cloves of garlic
1/4 cup lime juice
1 serrano pepper
A handful of cilantro
1/8 tsp salt

Mix everything together in a blender and enjoy! Great for chip dipping or for putting on fajitas or quesadillas.

Roasted Red Tomato Salsa
2 Vine-ripened tomatoes
2 cloves of garlic
3-5 dried arbol chilies, adjust for level of spiciness. I usually put 5 or 6 in mine.
1/8 tsp salt

Pour some cooking oil in a frying pan, just enough to coat the bottom. Slice your tomatoes in half and lay them flat side down in the pan. Then add the cloves of garlic and the arbol chilies to the pan. Cook on medium heat until the bottoms of the tomatoes are nice and blackish/charred in spots, and until the garlic is nice and golden brownish on both sides. The chilies will only need to stay in the pan for 10 or 15 seconds, as you only want to roast them a little bit. Too much longer and it will burn them to a blackened mess and they will ruin the flavor of your salsa.

Remove all ingredients and add to a blender with your 1/8 tsp of salt. Blend together until it's nice and smooth and enjoy! I usually make this salsa as a topping/dipping salsa when I am having chicken taquitos.
