Who makes their own bread?

As I'm trying to eliminate things from my diet that are making me unhealthy, I want to start making my own loaves of bread. I'm sure some of you already do this. Care to share your recipes/tips?

My mate (who got me into the shroomery) used to make his own bread. He would throw in chunks of cheese and whatnot and that must have been the best damn bread I've head in my life :awesomenod::thumbup:

The gf got one of those automatic makers.  You just mix the shit in and out comes some hot steamy bread a while later.  She's got tons of recipes, cheesey bread, cinnamon, etc.  It's pretty damn good.

My wife makes a bunch of bread.

Nothing like homemade bread. Store bought tastes like old crap afterward.

Our favorite is garlic ciabata bread with little chunks of the garlic still in it.

I have started making my own bread, I am so far only successful with a wheat bread, of course I have only made about 4 loafs now.
My wife is good at making other kinds, like french breads and other ones.

The recipe I use came from http://www.kingarthurflour.com/shop/RecipeHome
They have a lot of recipes and and user comments from people.

I hear these books are good, might be able to find them at a library.

One tip when making your own bread, try not to eat half of it the first night :shocked:

Using a cooking thermometer is a good thing. Nice to know when your bread is done, at least until you know your oven and recipe.

Avoid recipes that call for volumetric measurements like cups and tablespoons if at all possible.  A good baker's formula (not "recipe") is always given in weights or percentages.
Try and find a planetary gear standing mixer, they can handle heavy doughs a LOT better and won't break easily.
Start a sourdough starter and keep it alive in your 'frige.  The older it is, the better.  My uncle has one over 3 years old in his 'frige and they live forever.
Learn about how protein %, acids, bases, leavening agents, etc. affect the final product.
Use an oven thermometer.  Don't peek until it's done cooking either.

Just some random tips as I thought of them.

Hell yeah, screw kneading dough by hand.

I love my mixer, it's old, and it's a brute, but boy is it heavy.


I need to start a sourdough starter myself.

i know there one cup of yogurt and yeast and some other shit

i have a bread machine.

best investment, ever!

add the ingredients for the type of bread you want, and walk away. Wake up to the house smelling great and a loaf of fresh, hot bread.

loaves of bread also make great, out of the blue gifts to people. It seems super thoughtful, costs about a dollar and took virtually no time at all.

they are not even that expensive. Mine dropped off the kitchen counter while it was in mixing mode and cracked the lid. could have easily been fixed but i just bought a new one and gave that one to goodwill:shrug:

Thats sort of like what my friend had. Eventually he got bored with it :shrug:
