Just my 2 cents, but the condensation in the jars does contain nutrients, although a small amount. The water will pick up nutrients from the substrate, maybe when you flipped the jar some of this dripped into the "dry" verm layer.....?

Great observation! I had not thougt of that, which would also explain why I frequently will see mycelium growth into the "dry" verm layer.

doubt that the sweat contains nutrients since it has been condensed from evaporation.
the verm. gets damp during the sterilization/steaming process.
this always happens, flipping or not.
