I live a few hours north of the MX border man, we got so many tacos it's stupid. This damn city prides itself on the tacos but I love 'em.

My dad raised me to not waste any part of the animal. Deer/Elk liver is one of my favorites. He also makes a mean pickled heart that sits in onions and vinegar for at least a month after being boiled clean and sliced fairly thin.

I have had so many good tongue tacos from taco trucks in Washington/Cali it's unbelievable how cheap they sell them too. 2 corn tortillas with some lime and onion.

I love venison heart boiled fresh, sliced thin, rolled in seasoned flour then egg then the flour again and fried in some olive oil or real butter.

I work at a Morton's currently and we have a "cajun ribeye" that marinates in oil and our cajun seasoning for at least 60 hours.

It is godlike.

I prefer rib-eye. New york is a light-weight's steak.

I liked my steak well-done when I was a kid.. Liked it with Ketchup too.
Around high-school, I started liking a little pink in the center..
Around the end of college, I started liking it rare in the middle.

Now, shit, just walk 'er around the campfire once, and put 'er on mah plate..
