Creole and Cajun food

I love Creole and Cajun food but is a bit of a rarity here in the UK.

Anyone got any favoutites that I can google up and try to re-create in the kitchen?

I don't think I've tried gumbo before, thats a kind of stew isn't it? I'll have to check it out!

So far I've only made jambalaya. Tried blackened cat fish and that stuff rocks!  :thumbup:

Heh, that was a lucky guess. Just googled Arroz con Pollo and it is a chicken dish  :smile:

I'd definately be interested in your Grandmas recipe. Sounds tasty!

Hmmm, I've had turtle soup before but I don't think it was the real deal.. It was like a beef consomme with sherry.

The only turtles I find around here are the ones in pet stores. Don't think I'd have the heart to murder a little pet turtle :/

The Alligator turtles are endangered but the one i had was a softshell and they are the best for soup anyway
This big dude was dead on a trott line so i cleaned him out and made a shitload of soup
Its some seriously sweet meat and on a bed of rice its delictable
I grew up here in Houston and we have bayous everywhere...i caught a big bluecat the next day in that same bayou that fried up really good
Im getting really good at my cajun Tex/Louisiana ~cusine
I was gonna document my turtle soup `recipe in the culinary forum but i was banned that night :crazy: :faded:

I have a bunch of pics to upload but my a floppy drive is out on my new computer...
Ive been re-vamping my kitchen and making it more cooking friendly because im doing a major diet change, i will be posting some cajun recipes as i cook them
Cajun cooking is very easy if you can get really fresh seafood and critters outta the bayou
The main thing about any gumbos is making the roux...you can sometimes find Roux`s in a grocery store ...It took me like 2 times trying a roux before i got it pretty much perfect
I installed a ac unit for a cajun friend/hunting buddy of mine today and took him some of my turtle soup, he just called me all drunk telling me i had to be a really big cajun dude from Louisiana in a past life  :smile: thats a damn good compliment  :yesnod:

fresh seafood isn't a problem what with living on an island but critters outta the bayou is going to be a problem  :tongue:

Blackened Redfish

Colonial Williamsburg

Ingredients


2 tsp. salt, optional
3/4 tsp. red pepper
1/2 tsp. white pepper
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 tsp. dried oregano
2 tsp. paprika
8 skinless, boneless fillets of fish- preferably redfish, pompano or tilefish, about 1/4 lb. each
1/2 cup melted butter


Combine the salt, red pepper, white pepper, black pepper, thyme, basil, oregano, and paprika in a mixing bowl.

Dip the fish pieces on both sides in melted butter.

Sprinkle both sides with the seasoned mixture.

Heat a black iron skillet over high heat about 5 to 10 minutes or longer. The skillet cannot get too hot, until it starts to lighten in color on the bottom.

Add two to four fish pieces and pour about a teaspoon of butter on top of each piece. The butter may flame.

Cook over high heat about 1 1/2 minutes.

Turn the fish and pour another teaspoon of butter over each piece. Cook about 1 1/2 minutes.

Continue until all the fillets are cooked.

Serve immediately.

Redfish and pompano are ideal for this. If tilefish is used, split the fillets in half. Place the fillet on a flat surface, hold knife parallel to the surface and split the half through center from one end to the other. The weight of the fish may vary from 1 to 1 1/2 pounds, depending on your skillet, but they must not be more than about 1 1/2 inches thick.

Makes 4 servings

IMPORTANT NOTE: Attempt this procedure only in a well ventilated place, taking special care with intensely heated pans.

Unfortunately I cant get redfish, pompano or tilefish over here but I'm sure I'll be able to substitute it with some other type of fish.

Are redfish, pompano and tilefish firm meaty fish?

when i used to eat meat, i was once in jamaica, and had the best jamaican jerk chicken i've ever tasted. kind of like tandouri chicken, but a bit different...

Pompano are a very delicate fish and arent anywhere near what a Redfish is
I have caught a lot of Pompano when i was in the Navy fishing off the coast of the Carolina states
You can use catfish instead of redfish for any blackened dish
The best fish you can ever eat is a Red or a Cat
The best small fish is a Pompano or a Sunperch
Ive eaten Kingfish and Dolphin that are incredibley good but thats a offshore catch type fish
Mahi Mahi is Dolfin and around here they call them Dorados ...Eric has caught Dorados offshore in mexico before
Ive never caught a Dorado or a King before
Ive caught huge ass Red Snapper,Sharks,Triggerfish and Grouper before
on party boats that go 25-40 miles offshore before

I have just about all the ingredients for a jerk marinade, might fire up the barbecue tomorrow  :cool:
