Found a cool NO Tear solution for having to cut Onions

Was looking into French onion soup, pulled out the Americas Test kitchen book her brother sent us and found this interesting tid bit. Tried it last night and it works.

From the book.......

So wen an onion is cut the cell walls are damaged and in the process sulfuric compounds and enzymes. One notably called Sulfoxide Lyase. those compounds and enzymes are separate wen the onion is still intact,  so cutting it you're creating an entire new compound  Thiopropanal Sulfoxide and as it oxidizes into the air the result is the tears.

Says the best way to keep the tears from shedding  is goggles lol but the cool trick is a FLAME cut near a candle or gas burner that is on and it prevents the oxidation and then no tears.

And making piles of onions for rings or soup and other things few pounds onions sting after a bit.

white onions are the stinkiest.

older red onions can be pretty pungent too.

Some onions are more intense then others, when I was working in kitchens, we'd go threw giant bags of onions each couple days. Naturally we'd have to cut and peel them all. Asfar as I know there isnt much you can do, some batches of onions just seem far more potent then others, you get that one batch that makes people near you start tearing up. You get used to it after awhile, but sometimes 50onions deep it can get to you. In my own kitchen I've never ever had this problem.

I used to be able to handle them pretty well but now they are really getting me.  I think my old age might be drying my eyes out or something.  It's definitely getting worse.  The candle seems to help a little but not much.
