Well Ive done it...

I made THIS..


Out of THIS...


Here are my nachos... First I took the veggies. Fire roasted the peppers and pealed them, diced them and stired them into the rest of it all diced up with a bit of hot sauce, cilantro, lime juice and salt..... Damn good salsa fire roasted chilies makes...

Next I took a bunch of leftover marinated (uncooked) skirt steak that I had in the freezer from a fajita night and I braised it in the oven with one can of enchelada sauce for 3 hours... Then I let it cool a bit, cut it into small pices and sauted it till crispy in rendered pork fat.

Beans were from a can but damn tasty..

Cheese sauce was made by melting 2Tbsp. butter and browning 2Tbsp of flower in it.. I added 1 cup of milk, 2 Tbsp olive oil and almost three cups cheese loosly grated. This all melts together and makes for a GREAT cheese sauce... Good for Macaroni and Cheese too...

Assembly was a layer of chips, both white corn and yellow corn from two bags I had around. Beans and then cheese and then Meat and then beans and then sour cream and then salsa and then meat and then cheese... Toped off with more chips, beens, salsa, meat, cheese and cilantro.


Good stuff...

Well done on those ultimate nachos! Definitely took more care to make them than I did the last time I tried... but since I took a pic I'll add it to the thread anyway.

Mine were basically just a plate of laid out tortilla chips covered with grated sharp cheddar and put in a toaster oven to bake for a while until the cheese was nice and melted. Then in the small open space in the middle of the plate I first piled refried beans (from a can), chopped vine ripened tomatos, red & white onions, chinese parsley aka cilantro aka coriander, sliced olives & greek pepperoncinis, topped with sour cream, ghetto-processed guacamole (that my housemate bought), tapatio and ground cayenne pepper.

sweet, but the secret to good nachos is toasting the chips.

it's really easy, just empty a bag of chips onto a pizza or cookie sheet, turn oven to broil, let set in there for maybe a minute or two-not very long. then top with all your goodies.
