To many variables to even begin to guess. Give us details like strain, humidity, odour etc...

Strain: Australian cubensis
Humidity: Plastic bag over top of the casing. Thought it might be too high so I took it off for a while, still no luck.
Odour: Noticed the good mushroom smell of the mycelium when it was in the jar. After I cased, I couldn't smell anything, just soil.

Is it getting proper air exchange?

Are you SURE it's not contaminated?

Exactly how long has it been sitting there?

I think the air exchange is fine
Contamination was my first concern. I haven't seen any visible signs of it yet though which is surprising. It seemed to do well before.
It's been sitting here for well over a month, in fact probably two months.

maybe cobweb started to form with the mycellium, this usually makes it look gray and not so healthy. i've had some jars for months and they were fine. don't worry as long as they smell like myco like you said.
