So I found some edibles today...
    #13279555 -

Went for a good wander round some mixed birch and coniferous forest in Scotland.  A nice mix of Chanterelles, Birch Boletes (orange and brown), Bay Boletes, Larch boletes and even a Cep thrown in for good measure.  My best haul yet.  Around 1kg of Chanterelles alone I think.  Unfortunately there were LOTS of mushy, old Chanterelles that would have been prime around a few days ago...but not complaining.  Gnocchi with Chanterelle and Cep sauce for dinner tonight .

Hope others are having good luck finding tasty shrooms

Cheers

Very Nice!!!

Probably not telling you anything you don't already know but you should not store those mushrooms in that plastic wrap.

I was going to freeze most of them in cling film.  Is there a better way to freeze them?  Thanks in advance

Dry the boletes and pre-cook the chanterelles.

I like to sautee the chanterelles down in a little butter with a pinch of salt until they give up most of their liquid to the pan but before it evaporates. Let them cool and then portion them in ziplock bags along with the liquid from the pan forcing the air out of the bag. They will take up about 1/10 of the freezer space that way and will not get freezer burn. They maintain most of their flavor and texture this way and are easy to defrost when ready to cook!

Ah cool, I'm pretty new to this foraging business, so thanks a bunch for your tips.  I'll go fire up the frypan!

Another thing that works well if you have a shit load of chanterelles is to just put them in a clear glass 9 by 13 baking dish with a pinch of salt and cover tightly with foil. Put them in a preheated 350 degree oven for about 20 minutes or so until you see the glass dish full of water nearly up to the top of the mushrooms. Cool and proceed as previously mentioned.

Chanterelles will keep fresh for quite awhile in a brown paper bag in your crisper drawer and they are always best fresh so don't put them all up if you want to eat some within about the next 4 or 5 days.

I'm curious, did you nibble those boletes to make sure they taste ok?

Your find looks a LOT like the haul i brought home a few weeks ago. We had boletes that looked just like that big one that were absolutely acrid and disgusting. lol.

cheers man, i know the chants are gonna be yummy

Good advice:thumbup:

Most of them look like Leccinum Insigne or Scabrum but there is one in there that I see that might be Tylopilus felleus (in the middle of the pic) which would ruin your whole batch if mixed in. It is a good idea to taste a piece of every bolete you harvest until you are 100% sure of what you have.

Did the Leccinum turn black where you cut them?

Oh crap, I didn't taste the boletes before I chopped them (and, worse...mixed them!).  Noooo!  The one in the middle, I thought, was a bay bolete.  The cap was slimy when it was wet, a characteristic of bay boletes I thought.  Well, I guess I'll find out when I use 'em.  The chanterelles and Cep I had tonight were delicious however!

Yeah, the orange birch boletes turned black when I cut them, and the brown birch boletes turned slightly bluish black, and where stained around the base.

Thanks for the advice, most appreciated

Don't worry, it was probably a bay or suillus, either way no problem.  I think your orange capped leccinum might be leccinum Insigne,  aspen boletes, and the brown capped ones leccinum scabrum, birch boletes
