Lumpia, Chicken adobo, Pancit.

1 egg
half onion minced
teaspoon garlic minced
half carrot minced
soy sauce
little flour
LUMPIA WRAPPERS (couldn't find any today so I used spring roll, not the same.... bummed me out)

Pancit:
pancit noodles
onion
peppers
garlic
soy sauce
fish sauce
pepper sauce
carrot
chicken boullion

mix everything then wrap

close up

pancit

fry them

fried

pancit

plate

you should really try making your own noodles and using them, the recipes
are always simple but the flavor and the mouth feel are far superior to
any packaged noodle you'll buy

I'll leave that to the asians, this took 20 minutes with the trip to the store. Making bread and noodles is a pain in the ass, I dont even like doing it when I get paid to.

very nice! i believe this is the first time i've seen someone interested in filipino food :P

the only thing i'm going to comment on is the type of noodle that you were using for pancit...with that sort of recipe you might want to try rice vermicelli noodles instead. maybe try different types of pancits from different regions? pancit palabok (uses a thicker rice noodle with a sauce) :smile:

Love Filipino food, I would annihilate that plate you posted. I grew up on a military base with a lot of Filipinos and other asian markets. Also born in Japan so maybe it's from that too. As for the noodles those thick ones are good, I like the thin stuff too, it's right next to the other at the store so maybe next time I'll get some. This was maybe my third attempt at cooking lumpia and pancit. Anyway.... Filipinos are cool people and their food is great.

Find actual lumpia wrappers, it's just better that way. You can also buy frozen whole lumpia and just fry them, they taste authentic too.

Yes, actual lumpia wrappers are more rustic in appearance and come out with a distinctive texture, they're a bit a of a pain to seperate but it's well worth it to track them down.

Asian noodle making isn't that easy if you want true authentic noodles. It's nothing like rolling pasta out on a machine, there's quite a bit of technique and dexterity associated with noodle production, on top of that, noodles are cheap and keep for long periods, way more economical that having to make your own. That's like saying why not make your own burger buns? sure you can, but how many people do, especially if it's just a meal for you and your family. also, like boo commented, pancit as most peole are familiar with it is usually made using glass or cellophane noodles made from rice or mung beans and I'm sure they're not practical to make at home.

However I do agree with the superiority of anything homemade that's done properly. No doubt taste and texture would be incomparable.

noodles are easy regardless of the method of actual noodle making, it
can be done with a pasta roller, a rolling pin and a sharp knife or by
pulling the noodles, the techniques can be a little tricky at first even
with a pasta machine, most people dont realize they dont roll flat, they
taper so the dough has to be flipped every time it passes, if you intend
to pull the noodles you need glutenous flour, that way it handles the
stretching better

the cellophane noodles state here



yes it can be a pain in the ass if it's something you dont like doing
but doing it a few times just for giggles is always worth while

noodle pulling is a whole other art and discipline in itself and takes years to master. Im not trying to dissuade people from trying it, on the contrary I applaud anyone that would at least want to attempt it. It shows that you actually care what you put in your body and appreciate the work that goes into something as mundane as noodles. All Im saying is its not that easy to just make your own (especially pulled cellophane) most Filipinos do not make their own noodles, especially when you have shops that just specialize in only noodles.

My burger bun analogy was too easy, maybe something like homemade phyllo dough would be a better comparison. Honestly how many people would bother to make their own phyllo especially after realizing the time and space needed to make it right?

I believe you're really overestimating the skill involved, I mean what exactly will take years to master? "work fast, use four"

I dont believe any of these people studied under a noodle maker for 10
years to learn the secret art of pulling noodles and as we'll see, it
takes very little time, possibly more time to make the dough than to
pull the noodles... as I've always said, it's just cooking, it aint that hard






even girls can do it their first day

actually the shops that specialize in noodles will have people there
that do nothing but make noodles, it works the same in good italian
restaurants, breads and noodles made by one person and no, like most
other people, the folks at home and in many restaurants do not make
their own noodles, they aim for the convienience but that often comes
with a cost... flavor, texture and the additional 8 cents for packaging

me... filo can be a little difficult though and for me finding the
flours, high and low protein flours for texture and flexibility, though
a simple all purpose mix can be used. The huge tables are a requirement
for mass production but we're not opening a factory.

go to hong kong and see how they do it. then come back to me and see if you can do the same thing just as fast. you are UNDERestimating the art of noodle making. Search for the bizarre foods episode where Andrew goes to a noodle restaurant in China and tries his hand at noodle pulling, I defy you or anyone else to master that in one days time or even one year. It's just like everything else, there are some that make just mediocre noodles and there are some that make extraordinary noodles, just because they're homemade doesn't make them superior by any means. Shitty homemade noodles are shitty homemade noodles.

really? try looking up El bulli, Mugaritz, El Poblet, Pierre Gagnaire, Michel Bras, Marc Veyrat, Inaki Azipatarte, etc. and tell me if that type of cooking is "easy" to do. Sorry, you may not know, but I don't cook or deal in terms of chain slop, turn and burn greasy spoons. It's Michelin star quality or nothing for me. See it's that depreciation of food and cooking in this country that leads to crap products, shitty chain restaurants and an obese population thats expected to die younger than the previous generation.

you thought Liquidsmoke was a food snob? No one holds a candle to me on this board when it comes to that. I actually currently work in a fine dining establishment, where I really cook and I've traveled and eaten in every continent except Africa (oh, sorry, I mean the "country" of Africa like Palin said)

one can pull a noodle unless they attended Noodle U, maybe you're

going along with soochi on this one. people can try and pull noodles (fair be it) at home and make perfectly nice noodles, but, i'm going to leave it to the people who have been practicing and know their shit when it comes to say, making rice vermicelli...

and wanted to add, that i respect all the chefs who put in their time and effort, who earn michelin star statuses for their restaurants. eating has now become an artform..from the different textures, flavours, pairings...wonderful (if you can afford it)

you miss the video of the beginners pulling noodles? it's an easy enough
task, dont have to be a grand master to make a noodle, machines make most
of the noodles bought in stores, they didnt practice for a decade to make
the cellophane noodles or rice vermicelli, sure studying for 20 years in
china will help but it's not required to make a good noodle



and this certainly doesnt have to be the level of pulling experience a
person would need to make a noodle

That last video is why I wont attempt noodle making, I'm sure with time I could learn it, like if I worked as a noodle maker for 12 hr a day under real Chinese folks. I think once it's in the muscle memory and you've been bitched out for ruining a batch of noodles by a angry Chinese woman.......you'd get the hang of it quick.
