placement of cakes for fruiting?

alright..... so i have 4 cakes P.E.S Hawaiian's almost fully colonized looking good, no mold and am wondering when i fruit them how to place them on the tin foil, the same way in which they were colonizing or upside down?

and also guys they have been colonizing for about a week now and the substrate is about 98% colonized with just a bit more to grow, yet i'm seeing pinheads already growing in the jar, time to take them out and put into the terrarium?
