Hot and Sour Curry Egg Foo Young

First the chicken.

Breast meat must be seasoned and tender, slice thin and marinate with oyster and chili sauce.

Bean Sprouts
Mushrooms
Onion
Celery
Green Bell Pepper
Red Bell Pepper
Parsley
Water Chestnuts
Carrot
Garlic
cilantro (tiny bit)
Boc Choy

Chop, dice, julianne the veggies into bite sized pices that will cook quickly.

Stir fry the chicken and place into a bowl with all the veggies, mix it all up. Crack in enough eggs to fill the bowl and cover the veggies and stir to incorporate, add nutmeg, soy sauce and white pepper.

In a hot pan with peanut oil ladle in 6 to 8 ounces of egg foo young and cook till golden brown on both sides.

Two sauces accompany this dish.
1) Mild yellow curry and coconut milk with lemon saucs.
2) Spicy Cilantro and green chili sauce.

Be sure to cover half the egg foo young with one and half with the other sauce, let enough sauce cover the plate for presentation and serve with a bowl of white rice.

MMmmmmmm... Ive got to make this.
