Damn this stuff is amazing...few thing's in life beat a good bowl of this heavenly goodness...

Hot and Sour Soup (from memory so bear with me)

The key is to make your own broth. Simmer a whole cutup chicken with celery, carrot onion, salt and pepper till youve got a crazy good broth.

Remove the chicken and save the breast meat. Use the rest of the meat for chicken salad.

Skim off all the fat and bring to a boil. Pan sear thin sliced boneless pork loin chops (as many as you want), chop mushrooms and add a can of water chestnuts, bamboo shoots, snow pea pods and whatever you think you might like for veggies in this.

Now that youve got a nice broth with good veggies and some flavorfull meat in their its time to make it taste like hot and sour soup. To do this you need corn startch, WHITE pepper (not black), red wine vinegar, white wine vinegar and sherry.

The sour taste comes from the vinegar, I like mine with more red than white and the sherry gives it a real tangy kick. White pepper ballances it out to make that spicey bite that you get with good hot and sour soup. Corn startch mixed with a bit of water gives it a little thickness and body which lets the soup coat your mouth amd kame you wana slap your mamma.
