Easy Mexican Chicken

1 small chicken (whole)
1 can ro-tel
1 can cream of mushroom soup
1 can sream of chicken soup
1/2 pound of velveeta

Boil chicken (aprox 1 hour) and de-bone
Mix all ingredients together
bake 30 min @ 325F

Crumble doritos over and serve.

Do you mind if I share my old chicken recipe?

Freakish Mexican Chicken Soup:

Some boneless (or bone in depends on what you want to deal with) chicken thighs

Toss these in simmering chicken broth (enough to cover) then toss in a garlic clove or two if you want.

Add a good amount of fresh cilantro
Adobo seasoning pack
Then toss in cubed small red potatoes
Vidalia onions
Corn


And uh....... Other stuff. I can't remember exactly what it all had but you want to accentuate the adobo, chicken, corn, and cilantro flavors. Those are key. The rest of the stuff is just other stuff you know.

Anything with chicken and a 1/2 lb of Velveeta has to be good.

Ro-tel is in the mexi section, right? Isn't it canned diced tomatoes, onion, and something else?

Diced tomatoes and green chillies

You can get hotter versions with jalapenos or habaneros
