No, but seriously, if you plan on making it your primary source of income it would be better if it was all above board. You don't want to have to launder all your profits and spend your life running from the inland revenue eh.

I just watched how they mass produce mushrooms on that "How Its Made" show. I saw it on Dirty Jobs before too. I was amazed how close what they do is to what we do. Its just on a much larger scale.

The one I watched had this giant pasteurization machine that ran for like 5 days or something to get the compost ready. Obviously thats something that would require a HUGE investment...

Growing Agaricus on an industrial scale... ok. But if you grow gourmet mushrooms for the local market... I don't know if it's that HUGE.

I'd personally skip agaricus (button mushrooms). The market is pretty well covered and it would take a huge investment to be able to produce a big enough amount to make it profitable.

Other edible species, on the other hand, are in shorter supply and will fetch a higher price.

If you are close to a big city which will probably have many gourmet restaurants then you should be able to supply locally without having the extra expense of refridgerated transport.

Apart from any research you might do you should certainly go to a Stamets Cultivation seminar http://www.fungi.com/seminars/index.html if only to get your hands on the cultures (and also learn a shitload).

Mycosupply also produce some full sized growrooms which might interest you (or give you an idea of what you will need).

When I sifted through the results for "Shiitake cultivation" I found lots of good info. One ducument in particular including a financial plan, and so forth.

And a story about a guy who planned to grow shiitakes from wood supplemented with spent brewers grain, but cut his losses in the end.

It was actually kind of discouraging. I came away with the feeling that it's not as much of a goldmine as I thought.

I go to a college where the local food "culture" is huge so I'm trying to enter the farmers market this year.  I disagree with people saying this cant be done without an autoclave.  Start with a pressure cooker or two and let the business grow organically.  You probably won't be able to live off selling gourmets instantly with this method but there is less financial risk.  Oyster mushrooms seem to be pretty essential as a niche market because large farms can't transport them without spoiling or damage.  Assess all of the places you could possibly sell to.  Organic food stores, restaurants, farmers market, etc.  Farmers market is too important to skip if you really want to get into the market.  Remember a lot of organic food stores, chefs from up scale restaurants, and people all buy from here.  Maybe a chef will come up to you and ask you where you get the mushrooms, maybe he will ask you to grow something specific.

Another thing is you need to know what your competition is.  Some mushrooms like agaricus bisporous (button mushrooms) have little room for new entry competitors.  The shelf life of them makes them easy to transport so the market is already saturated.  I'm not saying never try them but just don't try to get your foot in the door with this species.  Check the prices for everything and keep them recorded and what species of mushroom.

Just start small and if the demand is there, you will learn the skill to be able to grow the supply.  Don't even think about rushing in without having success under you belt.  I used to only do cubes and now I am trying lots of oyster species and trying out various methods to cultivate them. 

Another thing I should add is try to get as much stuff as you can for free.  Cardboard from recycle bins, coffee grounds from coffee houses, just imagine all the things people throw away you can grow on.  I really want to try and do a method where I grow off shredded cardboard because here on campus after a weekend there are just stacks of it laying out in front of bars and other shops.  Find anyway you can to cut expenses.  Instead of using rye for spawn try using birdseed.  There is a thread I started in the gourmet mushrooms sub category where people gave me tons of great information you should read if your serious.  Also read "Growing Gourmet and Medicinal Mushrooms" and "Mycelium Running" by Paul Stamets.  I have probably read GG&MM 4 times and am constantly using it as a resource. 

Feel free to PM me if you have any other questions.  Also check out post by a user called "buckeye oysters".  He does what you want to do in northern Ohio I believe.  He has been helpful to me by answering some of my questions.

That's what I was saying. The OP isn't aiming at becoming an industrial Agaricus supplier. I think what he plans to do is achievable. Growing Reishi, Oysters, Shiitake and selling them at a local market... why not?

That *is* a beginners class,
I personally had university classes (masters chemistry) preceeding, but what little microbiology I got (sixty hours, split evenly over theory and labwork) wasn't anywhere near impossible for a layman to understand. There were no prerequisites, the exact same classes were offered to freshman student trying to get a BA in chemistry (any field)

Now, I do not know anything about growing edible mushrooms for a living, I have no experience in doing such sort of business so as said before, you probably should talk to people who do. I'll have you know that producing foodstuff professionally is nothing like a hobby in most parts of the world; even ignoring health codes and fda regulations (just knowing what that means is a lifes work on its own in the US IMO), you owe it to the consumer to provide a *food*-safe product.

as for litterature, I'm currently reading a little gem:
"cleanroom technology" by W.Whyte, published by Wiley

I suppose it's out of the budget of somebody just contemplating but if you manage to find it in a library near you (or from another source :wink:, I suggest you give it a reading.
It also mentions this airforce manual I might add, haven't managed to read it through with midterms coming up I'm afraid.

On another unrelated or somewhat related note:
Books are *gently caressing* expensive when bought new, I've gotten multiple great reads from university libraries clearing their shelves. This is something to be on the lookout for if you're serious about this entire thing.

You could set up a stand at your local farmer's market. You wouldn't have to grow a ton, just a decent amount of several different types. A lot of farmers make their living at farmer markets and co-ops, and few of them grow fresh mushrooms (intentionally).

Plus, your overhead is a lot less with mushrooms, I'd assume.

There is great potental in this. I'm adding organic edibles to my organic farm this year. I currently produce fruits, veggies and eggs and work with an organic home delivery service, commonly referred to as a CSA. They can't wait for me to get the mushrooms going due to the demand. BTW, you don't even have to set up a booth at a farmers market. Other vendors will buy them wholesale and add them to their goods.

i've done all of these things, and i've never taken any micro-bio...  hahaha, then again, i have done a lot of things that would be done in rather advanced chem and bio classes... i'm thinking about going back to school to earn my BS (it'll only take 2 more quarters).  It would be easy a fuck because i've already been doing this stuff, it would be more like review, hehe, (and making that knowledge legitimized in the eyes of others...)

and abiot what bendover said, selling them to wholsesalers is fine once you have a pretty decent amount of production, but the big bucks on a small scale farm are to be made in the farmer's markets, local organic specialty stores and restaurants.  It all depends on how big of an operation you want going on...

If your really serious about it, I would get a job in the industry.  Get in there and work "hands on" with a large mushroom cultivator.  Learn EVERYTHING.  After about 5 years of "apprenticeship" you should have saved the money and have the knowledge to "scale it down" to your own personal business.

I am thinking about the same thing here in Germany, actually. Growing edible gourmet varieties and selling them to restaurants and at the local markets. I already talked to my wife about it and she thinks it's not such a bad idea after all. Luckily, my family is very supportive of my mushroom hobby. Just yesterday night my 9-year-old helped me spawn my cubensis Na Muang rye jars to bulk. He's my myco assistant. It's really cute when he's in cap, mask and gloves loading cube trays. He hunts edibles with me all fall, too. :lol:

That is good advice for a newbie that has little to no experience already.


And going to Paul Stamets farm/business (Fungi Perfecti) will show you how to set up your farm and lab.
I've been there and it's a very nice place.
