I had some smoked deer meat Saturday night that was awesome.

We would take deer meat and mix it 1/2 and 1/2 with regular hamburger meat and make meatballs out of it too.  Done as swedish meatballs it was good.

One friend I have marinates hers overnight in Italian dressing to help eliminate the gamey taste.

You got some backstrap? Thats the only part of a deer i won't give away.

Cook it good man, butterfly it, shove some good peppers and cheese in it, Close it, wrap in peppered bacon, tie it back shut, smoke it for several hours, finish it on the grill.

I've been aging it in the fridge at 36° for 4 days now. I should probably do something with it soon.

I don't have a grill. I don't even have a car to go buy groceries to buy stuff to cook with it.

cut it into chunks, marinade it, cook it in a pan (grill on kabobs would be better..). use the chunks in whatever you like.

that's how i usually cook lamb, and it's bomb.

You could always just cut it into strips and fry it. It's damn good.

I just fried some up tonight in some olive oil, basil black pepper and Mrs. Dash.

Pretty damn good.

I got about 4.5 lb left. No, it wasn't gamey. Just tasted like deer.

I find the best way for me is to coat your "steaks" in flour with your choice of season salt and black pepper mixed in

fry it up in butter

"deer cookies"

Flour is one thing I forgot last time. It would have been better.

Most of the rest of it is going into canned chili and stew which will probably mostly be given away to friends.

What doesn't get made into chili will probably be made into jerky. Though it seems kind of a shame to make jerky out of backstrap.  :undecided:

venison stew>venison chili.:yesnod:

brown the venison a bit in a pan, throw it into a crock-pot or large pot on the stove at medium low temp with some water, a pinch of salt, celery, carrots, corn, and taters.:drooling:

I think most people destroy venison by over-processing and overcooking it. When I butcher I leave all of the fat on, take out the backstraps and tenderloins whole, cut the ribs off the vertebrae with all the attached meat in two racks (they're great BBQ), make two shoulder roasts, two rump roasts and two leg roasts, all with bone in. The shanks I use for stew mean. No ground venison and no sausage.

The leg roasts are the best. I cook them exactly like I would a leg of lamb. If they don't have a thick layer of fat I cover them with thin slices of salt pork or pancetta, then cake them in a mixture of pepper, coarse salt, olive oil, herbs and ground dried mushrooms (black trumpets and morels, usually). Put it in an oven preheated to 450, then drop the temp to 350F and roast until medium rare (with my thermometer 147F is perfect).

Every person I've ever served this to has loved it, even those who said they didn't like venison. Like lamb it's best to eat the leftovers cold.
