I use a course cheese grater, saw someone post that a couple of weeks ago, and it's definately the best way to spawn poo with pf cakes!  You can really get it all evenly mixed just like rye.  My iguana is admiring his tray of creeper mycelium on horse poo done with that method (95% colonized in 10 days, 12:1 ratio).

wondering if you use a humidifier or go with perlite for humidity

I use neither. I mist the casing layer if it looks dry, and the moisture from the trays maintains an RH% of around 80-95% when I leave the "front door" cracked.
