Dinner Ideas....?
    #8712413 -

I'm having my girl come over tonite and I want to make a decent dinner but I can't think of anything I haven't already done before.
Throw any ideas out if you got 'em... anywhere from common to gourmet.

cheers!

Pan-Grilled Lamb Shoulder Chops

1/2 cup freshly squeezed lemon juice(i replaced this with 1 cup simply lemonade.)
2 tablespoons whole-grain mustard
1 tablespoon chopped fresh rosemary
3 cloves garlic, minced
1 teaspoon kosher salt, plus more to taste
1/2 cup extra-virgin olive oil
Freshly ground black pepper, to taste
Four 8- to 12-ounce lamb shoulder chops

To make the marinade: whisk the lemon juice, mustard, rosemary, garlic, and 1 teaspoon of the salt together in a medium bowl. Gradually whisk in the oil and season with pepper. Transfer the marinade to a large sealable plastic bag. Put the lamb chops in the bag, seal, and shake vigorously to evenly coat the meat. Marinate at room temperature for 1 hour or in the refrigerator for at least 4 hours and up to 12.

Remove the chops from the marinade and transfer them to a plate. Discard the marinade.

Preheat a large cast-iron grill pan over medium heat for 3 to 5 minutes. Raise the heat to medium-high. Season the chops with salt. Place 2 chops on the grill pan, and cook until the chops have distinctive grill marks, about 3 minutes. To make crosshatched grill marks, re-position the chops, moving them about 45 degrees on the ridged pan, and continue to cook about 3 minutes more. (The chops will have only cooked on one side at this point.) Set the chops aside and repeat with the remaining 2 chops. Return the first set of chops to the pan to cook them on the other side. Reduce the heat to medium low, and cook the chops until medium-rare, about 2 minutes. Repeat with the other chops. Let the chops rest for about 5 minutes and serve.

Lemon Dill Green Beans

2 pounds fresh green beans
1 1/2 teaspoons salt -- divided
1/3 cup olive oil
2 cloves garlic -- minced (optional) sometimes i like it better without.
1/2 teaspoon fresh lemon rind -- grated
2 teaspoons fresh lemon juice
1 tablespoon chopped fresh dill

Cook green beans and 1 teaspoon salt in boiling water to cover 2 min or till crisp-tender, drain. Add oil in large saucepan, add garlic and saute 30 seconds. Stir in remaining salt, lemon juice, rind. Add green beans and chopped dill, tossing to coat.

+

Steamed butternut squash.  MASHED and seasoned with salt and pepper.

oh and i forgot to mention, the meal i just posted, is cheap.  two big ol lamb shoulder chops cost around $5-6, green beans are less than a dollar a LB, and butternut squash is pretty cheap as well, a large one shouldnt cost more than like $3-4

so all in all plus the other ingredients, it should not cost you more than $20 for a big, delicious, pussy getting meal.  :awesome:

I doubt he needs to buy sex from his girlfriend with exotic food.

Make something she likes... I wouldn't attempt anything tricky that you have not made before

Alfredo with some portabello(SP?) mushrooms with your choice of meat...Chicken, fish(I don't like it as well with alfredo), shrimp(the good kind don't be cheap), or even a nice piece of steak.

Alfredo with shrimp and broccoli in it.
Steak.
Salad.
Some type of desert...Like a chocolate dish or something.

Its quick and easy...And good if you can cook half way worth a shit.

what do you mean you dont have time????  how much time do you have?? and why the hell didnt you ask us this YESTERDAY to be prepared for today?    it takes an hour to marinade, 45 will suffice, and you can get everything ready to cook while it marinades, once its done marinating it takes literally 5 mins to cook, so if you time it right you can have a delicious dinner waiting for her in exactly an hour from when you get all of the ingredients home.

I made a pretty good chicken and corn chowder last night, and it's super-easy. Got some veggies, milk, flour, and meat? Pretty much anything will work.

-Sweat your veggies in a big pot at medium heat as you chop them fairly small (chop the carrots and potatoes first, or whatever cooks slowest), in another pot heat your milk until almost boiling, and in a third pot mix almost equal parts fat and flour (it should have the consistency of wet sand) over medium heat for a few minutes.
-Whisk the fat/flour (basic roux) vigorously into your milk, lower the heat and let the flour cook out a bit (it should thicken in five or ten minutes quite a bit).
-Once the milk is thick enough by your standards and the veggies are soft, add the milk to the veggies and whichever meat (if any) after it's cooked in a separate pan.
-Add whatever spices, salt&pepper, and you're good.
-Serve with a thick slice of garlic toast if you're like me and you enjoy dipping and various textures.

It's been raining here for a few days so a hot bowl of chowder is ideal, but I don't know what the weather's like over there. Soup doesn't usually translate well into a hot and humid kitchen. :tongue2:

prosciutto ham, asparagus, and angel hair pasta.

boil the pasta like you normally would and drain.

As you are boiling, chop a bundle of aspargus in half and remove the bottoms. then bake asparagus on a greased cookie sheet at ~350.(until soft)

then, chop proscuitto into 1" strips. lay out the prosciutto ham on a greased skillet and fry until the edges curl.

drain the noodles, top them with asparagus and ham, serve with a sprinkle of Parmesan and a side of garlic bread.

the only problem with this is noodles never make a good date food due to silly slurping noises.
