do PF tek jars need exposure to air while they are colonizing? What if I put a layer of aluminum foil between the holes in the lids and the vermiculite layer (this is called a ramsey seal). .. . does this adversely affect the colonization?

I've always used a ramsey seal and everything worked out great...... I EVEN HAD A FEW JARS that believe it or not I never took the cakes out of and when I did they had big ass mushrrooms in them all compressed....... One actually appeared to have pressed the lid open half way.....

awesome -- i like the idea of a ramsey seal better, because i dont like the vermiculite getting all mixed into my mycelium

Here is my experience with PF jars. At first a coarser type vermiculite, SCHULTZ brand to be exact, was used along with brown rice, NOT organic, and spring water. They took FOREVER, like 5 weeks or so. The lids were loose and the substrate dried out. I had to inject water to get them to finish growing. The second attempt the lids were tight and again, it took forever. I thought maybe I didn't have the right balance of keeping the lids loose enough for air, but still having it tight enough for water retention. Then came something that changed my mycological world forever. I ran out of vermiculite and I couldn't find it anywhere. I finally ordered some medium grade and it was quite a bit smaller than I expected. I also got some ORGANIC brown rice from the local Co-OP. I made a manure water mix instead of the normal spring water. You would not believe the results! It grows so fast you don't have to worry about running out of O2 it seems. Many are 70-80% complete in just 9 days! So I guess the moral of the story is to make sure you are starting with a good substrate and growing conditions before you worry about loosening the jars.

I hear a lot of people using foil covers with no lids and having huge success.

k i gotta quick q, can one replace the jar lid with a filter disk post innoculation? or is that just asking for contam?

I wouldn't. You could if your filter disk was sterile and you changed it in a sterile environment.

The Mad Hatter is/was indeed mad if he previously thought that he could get away with using non organic flour and expect decent results
On the other issue as colonisation reaches 100% you will see that the growth will slow down, this is due to a Co2 buildup in the jars, that is there is not a lot of spare oxygen for the mycelium to use. It has been often theorised that you keep your jars covered all the time until birthing UNLESS the growth completely slows down too much, in which case you may flip them upside down (with some sort of air leakage possible) to allow the Co2 to drain out, this is quite effective so you should probably just follow that rule.
